Pancakes for Mardi Gras

For Western Christians, Wednesday of this week is Ash Wednesday, the first day of Lent, the forty day preparation for Easter. Tuesday, which is called Shrove Tuesday, or Mardi Gras, has long been celebrated as the last hurrah by those who begin this long journey towards Easter. Because Christians traditionally fasted from meat and dairy products during Lent, Mardi Gras or Shrove Tuesday, was the day to use up all of the meat, eggs, and milk in the house. This often took the form of making a pancake supper when whole villages or neighborhoods would get together to share these culinary treats. Mardi Gras (which in English means “fat Tuesday”) became a festive occasion, sometimes including parades such as still occur in New Orleans and in other places with a French or Spanish heritage.

Eastern Christians separated the giving up of meat and dairy products into two events. Meatfare Sunday occurs two Sundays before the first Sunday of Lent and is the day Orthodox Christians say farewell to meat, eating meat for the last time before Easter, or Pascha. Cheesefare Sunday comes the following week when dairy products are eaten for the last time before Pascha. People usually celebrate this day with cheese blintzes, a pancake wrapped around a sweetened cheese filling with a fruit or berry topping.

So THAT's what Mardi Gras is? I thought it was just the U.S. equivalent of the Love Parade.
